Almond Crusted Frozen Yogurt

courtesy of Jody Haymond

1/2 C. almonds
1 pint vanilla flavored frozen yogurt
2 T. sugar
1/2 tsp. cinnamon
honey
fresh berries (optional)

Heat oven to 350F. Spread almonds on a baking pan and toast until golden, about 10 minutes. Set aside and let cool completely.

Meanwhile, line a square cake pan with parchment paper. Using an ice cream scoop, make four balls of frozen yogurt - place balls on parchment and transfer pan to freezer - allow to harden for at least 1/2 an hour.

When almonds are cool, transfer to a food processor - add sugar and cinnamon - pulse until finely chopped. Roll the yogurt balls in the nut mixture then transfer to serving bowls - drizzle honey over the top of the balls. Add fresh berries if desired - serve immediately.
