
(we've done this so frequently and for such a long time, we don't remember where we first heard of it - it is a pretty simple and common recipie, so this wouldn't be a first publication, but any means.)
12 oz. Italian herb feta cheese
2-3 cloves minced garlic
1 baguette
extra virgin olive oil
tomatoes, diced
coarsly ground black pepper and sea salt.
Combine and mix well first two ingredients. Slice baguette at 1 inch intervals, with a generous sloping angle (see photo) and place on cookie sheet. Using a pastry brush, coat top side of each piece and toast lightly in the oven. Once toasted, first top each piece with mixture, followed by diced tomatoes. Bake at 450 for 10-15 minutes. Sprinkle salt and pepper to garnish.
