Banana Bread

courtesy of Leslie Horn

2 1/2 cups all -purpose flour
1 cup sugar
3 1/2 tsp. baking powder
1 tsp. salt
3 T. salad oil
3/4 cup milk
1 egg
2 bananas

Heat oven to 350F. Grease (with shortening - not spray) and flour one 9x5x3 loaf pan (or two smaller pans or mini muffins - makes 74!) Measure all ingredients into large mixer bowl; beat on medium speed for 30 seconds, scraping side and bottom of bowl constantly.

Pour into pan(s). Bake 50 minutes or until tooth pick comes out clean. Remove from pan and let cool thoroughly before slicing. Made even better with butter or cream cheese spread over a warm slice.
