Sugar Cookies

1 1/2 cups powdered sugar
1 cup butter, softened
1 teaspoon vanilla
1 large egg
2 1/2 cups all-purpose flour (we add 1 more cup)
1 teaspoon baking soda
1 teaspoon cream of tartar

Beat powdered sugar, butter, vanilla and egg in large bowl with mixer on medium speed. Stir in remaining ingredients. Cover and refrigerate at least 2 hours.

Heat oven to 375F. Lightly grease cookie sheet with shortening or spray with cooking spray. (or just use a SILPAT mat - they are the best!) Roll out to 1/4 inch thick on lightly floured surface. Cut into desired shapes with cookie cutters and place about 2 inches apart on cookie sheet.

Bake for 6 -7 minutes or until edges are very light brown. Remove and let cool on a wire rack. When completely cool, decorate with frosting (my favorite is the Betty Crocker whipped cream cheese in a tub, but Jay likes to make his own - if you want that recipe, you'll have to ask him!) and sprinkles.
